Opening question
Any bakers out there? [image: http://ajarnforum.net/vb/images/smilies/smoker.gif] I mainly use coconut and almond meal....but (like all things) - one shouldn't rely too heavily on any one ingredient (the main concern with almond is an overload of Vit E) I got some tapioca flour, so gonna try that. Anyone experiment(ed) with various flour types? Cashew flour is an alternative to almond flour. Tapioca you don't want to use by itself unless you're making something akin to poi. Rice flour is nice. There are good GF recipes out on the Internets with rice, tapioca, arrow root, and some other stuff. Almonds are ridiculously expensive right now - I suppose because of the California drought. A jar of almond butter costs $8.00 at Trader Joe's, and as much as $15.00 at Sprouts. Phucking almond mafia. Just thought I'd share.

I once made pita bread with corn starch because they were all out of white flour at the MaxValu.

So you made a slurry pancake. Sounds disgusting. Even corn bread needs some regular flour in order to have structure to rise.

coconut/almond/tapioca flour concoction in the oven now. added 2 eggs, cinnamon, mashed banana, 1/2 packet baking soda, tad of yeast, tad vanilla - layered it with blueberries/rasberries and topped it with dried almond slices, diced apple and some honey. I'm thinkin'.....it's gonna be gooooood.

baking soda is kind of weird - what is the acidic element you're trying to counteract?

Ah ok .. well it sounds like it came out ok. But usually you would want to use baking powder if the batter is not acidic. If you use baking soda without an acidic element, it will cause your cake/bread/dough to rise a bit and then fall flat on its face unless there is an acidic element like molasses, natural cocoa powder, (lots of) egg whites, buttermilk, sour cream, etc. Baking powder on the other hand has both an acid and a base - so it will make your baked goodies rise by itself.
